With few simple cuts, it’s time to coat them with flavor. A blend of olive oil, parmesan cheese, salt, pepper, smoked paprika, garlic powder and onion powder. Coating the sweet potato's with olive oil will help keep the skin crispy and crunchy.

Ingredients:
4 large Sweet Potato
1 tbsp Garlic, freshly chopped
2 tsp Coriander, freshly chopped
1/2 tsp Oregano
1 tbsp Olive Oil
Salt to taste

Pesto Mayo Sauce

Let's get cooking
1. Preheat the oven to 400 degrees. Line a sheet pan with foil and coat the foil with cooking spray/ brush some olive oil.
2. In a bowl add the olive oil, garlic, coriander, oregano, and salt and mix it well.
3. Spread the potatoes in a single layer on the prepared baking sheet. Bake for 35 minutes or until golden brown and fork tender.
4. Brush the garlic and coriander mixture over the sweet potato's (keep a little mixture a side for the dressing) and bake it for another 5 mins, this avoids the garlic from burning and enhance its flavor.
Serve it with some Pesto Mayo sauce, grated cheese, a squeeze of lime and pour garlic coriander oil dressing.
