Banana Cupcake

Ingredients:


Cream Cheese Frosting

1/2 cup Butter (Room Temperature

8 oz Cream Cheese

4 cups Sugar

1/4 tsp Salt


Cupcake Batter

3 ripe Bananas

1 1/2 cup All - Purpose Flour

1 tsp Baking Powder

1 tsp Baking Soda

1/2 cup Butter

1 tsp Vanilla Essence

3 tbsp Milk

1/2 tsp Salt

(Optional: Walnut, pecans or chocolate chip)


Garnish

Walnut

Chocolate Chips



Let's get cooking

Cream Cheese Frosting

1. Combine butter and cream cheese in the bowl and beat until it's creamy, well-combined, and lump-free.

2. Add vanilla extract and salt and stir well to combine. Then gradually add powdered sugar until completely combined.

3. Cool the frosting in a Use to frost completely cooled cake or cupcakes.


Cupcake Batter

Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners.

1. To a bowl, mash the ripe banana's and add the granulated sugar, butter, vanilla essence, milk and egg and whisk it for 10 - 15 min.


2. To the egg, sugar mixture, sieve the all-purpose flour, baking powder, baking soda and a pinch of salt and fold it in gently to avoid the egg mixture to flatten. Fold it in till the flour is completely mixed.


3. Once it is well mixed, add the walnut or chocolate chip and fold it in.


4. Spoon the batter into liners, filling them all the way to the top. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-18 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 21-23 minutes, give or take. (For mini muffins, bake 12-14 total minutes at 350°F (177°C).) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.


5. Remove the cupcake from the tray and allow it to cool. Once it has cooled down the frosting can be added to it


Serve it along with coffee and a lovely conversation.
