An extremely flavorsome and tasty North Indian curry recipe made with soaked chickpea (chana) and spices. The recipe is mostly enjoyed with roti, paratha, bhatura or puffed poori and also with rice.

Serve: 4 Prep Time: 15 mins Cook Time: 30 mins Total Time: 45 mins

Ingredients:

Chana Masala

1 cup Kabuli chana

1/3 cup Coconut

3 clove Garlic

2 large Onion

2 large Tomato

2 stem Curry Leaves

1 small Green Chili

3 medium Dry Red Chili

1 tsp Amchur Powder

2 tsp Red Chili Powder

1 tsp Garam Masala Spices

1 tbsp Baking Powder

2 tbsp Oil

1/4 tsp Salt

Water for a smooth paste

Garnish

Pickle

Lime and onion

Let's get cooking

1. Wash and soak the chana overnight. Wash it again and in a pressure cooker, add the chana, salt and baking powder (Baking powder helps to soften the chana and cook fast). Let it cook for 3 whistles on a lower flame and cook for another 30 minutes.

2. To a pan add onion, garlic, coconut and curry leaves, fry until the coconut is light brown. Remove the coconut and keep aside to cool and then add garam masala spices, dry red chili, and roast them. Once the spices are roasted let them cool. To the blender add the mixture and add green chili, tamarind to it and grind it to a fine paste.

3. To a kadai, add oil and once the oil is hot enough add cumin, curry leaves and tomato and sauté. Add red chili powder, amchur powder and the ground masala and let the masala cook well. Add the chana to the masala. Let it simmer for 5 mins.

4. To the gravy add Kasuri methi or coriander.

Serve it with rice or naan along with pickle, onion and squeeze lime on it.
