Cheesy Spinach Dip Wonton Cups

Who doesn’t love a cute little munching pack? These Cheesy Spinach Cups are exactly that. These cups are packed with an amazing spinach dip flavor and refreshing salsa to accompany with it. They are also easily portable. No worries about rolling that dip across the front of your party dress. Party appetizers should always be one bite treats that won’t leave you looking like a toddler at dinner. You can fill them with the dip and they become the perfect chip.

Cheesy Spinach dip wonton cups

Make these easy cups with few spring roll sheets and the filling with an easy and quick spinach béchamel sauce. A yummy little bite of cheese, spinach, and a few other ingredients make these cheesy spinach cups a popular party food. This recipe is very easy and has few steps to follow for such a flavor bomb. And the freshness from the salsa really bring out the taste.

Ingredients:

6 sheet Wonton Wraps

1 cup Baby Spinach

1/4 cup Butter

1/3 cup Grated Cheese

1/2 cup Milk

2 tbsp All Purpose Flour

1 tsp Oregano

2 large Egg

Salt to taste


Salsa:

1/4 cup Onion

1/3 cup Tomato

1 tbsp Jalapeño

1/4 cup Fresh Coriander

3 tbsp Lemon Juice

Salt to taste


Garnish:

Oregano

Grated Cheese

Coriander


Let's get cooking

Cups:

1. Take a square Spring roll sheet and cut in 4 parts. Preheat oven to 400 degrees. Spray a muffin tin with cooking spray. Lay the spring roll sheet into the muffin cups and allow them to line the cups. And bake at 400 degrees for 10-11 minutes until the edges are crunchy/ the sheet looks slightly brown. Once baked keep it aside to cool.


2. Rinse and clean the spinach and squeeze as much water out as possible. In a bowl add 1 cup water and very little salt and blanch the spinach. Once the spinach cools down, cut it in fine strips and keep it aside.


Béchamel Sauce:

1. In a sauce pan, add the butter and melt it, to that add the all purpose flour and fry it little till it gets slightly yellow and lumpy. Now add in milk little by little (to avoid lumps in the sauce) and stir it well as you pour in the milk.


2. Once you have added all the milk and there are no remaining lumps let the sauce boil for a minute. Once the sauce starts boiling and in the cheese and keep stirring. The cheese will start melting and give a smooth and stringy texture.


3.Now add the oregano and salt. You can also add pepper if you like. Now add the Spinach strips to the sauce and mix well.


Salsa:

Cut onion, tomato, jalapeño in small cubes and add them to a bowl. To that add some freshy chopped coriander, a pinch of salt to taste and lemon juice and mix everything well


Assembling

In a cup add in the cheesy spinach dip, and top it with salsa and freshly grated cheese and coriander.


Serve it with a slice of lime or a hot sauce dip.
