Chickpea Burger is a protein rich burger recipe, where the patty is pan fried and arranged in a burger along with sliced vegetables and a generous spread of mayo. The vegetarian Chickpea Burger recipe makes perfect one dish dinner for those Friday Movie Nights at home. The chickpea is simple to put together and makes a dinner under an hour when you have all the ingredients handy. To make your dinner preparation simpler you can prepare the chickpea patty ahead of time and spend under 30 minutes to get the dinner on the table.
We love this recipe because first of all it’s really easy to make. The only major work for this recipe is to soak the chickpeas overnight and then pressure cook them the next day.
If you want to cut short the process, you can definitely use canned chickpeas. Although the raw chickpeas just taste so much better. So, if you can do it, I recommend using raw chickpeas in place of canned.
Chickpeas make for a very nutritious and healthy diet. It reduces cholesterol, prevents constipation and helps prevent digestive disorders. Chickpeas are rich in potassium, phosphorus, magnesium and calcium. It also has impressive amounts of iron, sodium, selenium and small amounts of copper, zinc and manganese.
What’s in these chickpea burgers?
Mashed chickpeas: You can use a potato masher or fork to mash them by hand
Onion, green chili and tomato: Finely chop the onion and chili. Cut the tomato into small cubes for the bite of tangy flavour
A little flour: It’s needed to hold them together. You can use gluten-free flour if you need to, or all-purpose or chickpea flour.
Fresh Coriander: Adding coriander gives the patty freshness to each bite
Cumin, ginger garlic paste, smoked paprika and salt: Big flavor comes from cumin, ginger garlic paste and a smoky nuance from smoked paprika.

Let's get cooking
Chickpea Patty
1. Soak chickpea overnight and drain and wash it well. In a pressure cooker, combine the chickpeas along with some water and pressure cook for 6-8 whistles.
2. Once the pressure has released, open the cooker, drain the excess water and set the chickpeas aside. Use a potato masher or fork to mash them in a bowl until they’re mostly mashed with some chunks.
3. Finely chop onion, green chili, coriander and cut tomato in medium cubes. Add the chopped veggies in the bowl with mashed chickpea and mix well.
4. Add the spices, ginger garlic paste and plain flour to the mixture and mix well
5. Mix with a spoon and then your fingers until a sticky dough forms. Form 4 round patties and place them on a cutting board, about 3 inches wide by about ¾ inch thick (we had a 3-inch circle biscuit cutter, which you could use if you have one).
6. In a medium frying pan, heat ¼ cup oil over medium heat. Carefully add the patties to the pan. Fry for about 3 to 4 minutes until golden brown on one side. Flip and fry for another 3 to 4 minutes until golden brown, turning down the heat as necessary.
7. Transfer the patties to a parchment lined baking sheet. Bake for 20 minutes until golden brown and baked through.
Chickpea Burger Assembly
1. Cut the burger buns into half horizontally. You can optionally toast the buns on the skillet with a little butter or serve them as it is.
2. Place the cut buns on a flat surface. Place the lettuce leaves on the bottom half of the bun, then top it with tomatoes, cucumber, pickled onions, the cooked chickpea patties and spread mayo. Place the other half the bun over and serve.
