Coconut Ladoo is a sweet dish specially made during festivals. These ladoo's are made with freshly grated coconut and jaggery as a substitute to sugar making it more healthy. These healthy ladoo are very quick to make and very fun for the children too. They are best eaten warm when the jaggery is melted and the coconut is tender and soft.
This is an easy and quick dessert to enjoy even if you are on a diet. A dessert packed with nutritional content with the deliciousness of coconut, sweetness from the jaggery and perfectly coated with rice flour for a soft ladoo. A sweet yet healthy snack/ dessert for all times.

Ingredients:
2 large coconut
OR
1 cup Grated Coconut
2 cup Grated Jaggery
4cups Rice Flour
Warm water for soft dough
Salt as per taste
Garnish:
Extra Grated Coconut
Pistachio
Let's get cooking
1. In a double boiler, add the jaggery and let it melt. Stir the jaggery occasionally by taking it off the double boiler. Once the jaggery is completely melted and soft let it cool for 5 mins.
2. Once the jaggery has cooled down add the freshly grate coconut/ use store brought grated coconut and mix it well with the jaggery until the coconut is completely soaked in the jaggery.
3. In a bowl, take the rice flour, salt and add the hot water to make a soft dough. Once the dough is soft, divide the dough in small balls. Take one ball and flatten it in the palm and put in little of the coconut filling. Now bring in the edge of the flour together and close it, now gently roll it in a smooth ball and keep it aside.
4. In a steamer, put in little water and steam the rice balls for 10 mins or until the rice balls are firm.
Serve it warms by rolling it in more grated coconut and some pistachio on the top.
