Dal Fry

In the majority of Indian homes, dal is a standard ingredient. It is among the most convenient and soothing foods ever. No matter what region of India you are from, everyone has their favorite dal recipe in their home which is either served with plain rice or roti.


Each person adds their own flair to this incredibly adaptable recipe, which always tastes comforting. You could recognize it as lentil soup in other parts of the world, which uses brown, red, yellow, green, or black lentils.

By pressure cooking, dal and a mix of flavorsome spice can bring a lot more taste to such a basic dish. This dal fry dhaba style recipe can be made with the most staple Indian spice which can be easily found in you kitchen. This is very much enjoyed along with roti/ chappati, rice or even with jeera rice.

Ingredients:


Dal Fry

1 cup Dal

1 large Onion

2 medium Tomatoes

8 - 10 Curry Leaves

1/2 tsp Cumin Seed/ Jeera

1 tsp Mustard Seed

1/2 tsp Turmeric

1 tsp Kashmiri Chili powder

1/2 tsp Garam Masala Powder

2 medium Green Chili

1 tsp Kasuri Methi/ Dried Fenugreek Leaves

Salt as per taste


Garnish

Coriander

Lemon juice

Onion

Pickle


Let's get cooking:

1. Wash the Toor dal well and soak it for around 20 mins and add it to a pressure cooker. Add around 3 cups of water and pressure cook the dal till you get 1 whistle. Let the steam come out before opening the cooker. When the dal is cooked and soft, mash it with a masher of the back of a big spoon.


2. Heat some butter and oil in a pan or kadai. Add mustard seeds and let them splutter. Add jeera/ cumin seeds to the pan and fry till it starts to crackle. Also add a pinch of Hing (Asafetida).


3. Add finely chopped onions and fry them till they become light brown. Add finely chopped ginger, garlic and green chili Paste and fry till it is roasted. Also add 2-3 whole dried red chilies along with some curry leaves and fry for a minute. Add finely chopped tomatoes to the gravy and sauté till the tomatoes are completely cooked.


4. Add salt, red chili powder, haldi/ turmeric powder and garam masala. Mix and cook till the gravy starts to leave oil on the sides. Now add the cooked and mashed dal to the prepared onion tomato masala, and mix well.


5. Sprinkle some dried fenugreek leaves on the top and mix them with the dal. Let the dal simmer for 5 minutes. Dal tadka is ready. Add a few drops of lemon Juice before serving. Garnish with some chopped coriander leaves and serve along


Serve this Dal along with any rice or chapati and with onion slices and lemon wedges.
