The most favorite tea time snack, these are crisp cookies made from almond and oatmeal. Ready in just 30 mins, they are perfect as a coffee companion or a bite in between meals! These cookies are awesomely soft in the center that just breaks in your mouth into delicious crumbs when you bite into one!
I make my own oatmeal flour by coarsely grinding old fashioned rolled oats in a spice grinder. I prefer the texture of coarsely ground oats in the cookies. Additionally, the flavor of the dry fruits give the cookie a nutty flavor. This recipe is every effective if you are on a diet as they do not have butter, flour or sugar but yet it is crunchy, sweet and delicious like a normal cookie.

Ingredients:
2 cup Oatmeal Flour
1 large Egg
1/2 cup Stevia
1 tbsp Vegetable Oil
1 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Vanilla Essence
1 cup Almond, crunch
Salt as per taste
Garnish:
Walnut

Let's get cooking
1.Preheat oven to 180 degree C / 350 degree F.
2. In a mixture, add the oatmeal and stevia and blend to fine powder consistency. Finely chop the almond (add any other nuts)
3. In a bowl, beat egg to a fluffy consistency. Now add the oatmeal flour, nuts, baking powder, baking soda, vanilla essence, vegetable oil and salt as per taste. Keep the mixture for an hour for extra flavor.
4. Prepare a baking tray by lining with a parchment paper. Take small amount of cookie dough in your hands, shape into a ball and place on the baking tray. Keep about an inch of free space around every cookie.
5. Bake for 15 to 20 minutes till the edges turn brown. The cookie will still be soft but remove it from the oven. It will continue to cook as it cools down and will become crispy and crunchy. Store it in a cookie jar.
Serve for tea time or even as a quick snack option.
