Making homemade donuts is easier than you think. These taste like donuts from your favorite bakery, but they’re made in the comfort of your own home. With that signature bakery taste and texture. But during this pandemic purchasing donut was difficult. So in times like this when you can’t pick up your favorite doughnuts, why not make them at home instead?
Today I will taking a deep dive into homemade donuts– fried, sugary, old-fashioned, and comforting. It’s so much fun to be able to make them from scratch without leaving the comforts of home. Since this is the holiday season i will also show you the best way to decorate your donuts.
Serve: 30 Dough Rest Time: 2.5 hrs Prep Time: 20 mins Cook Time: 1 hr Total Time: 4 hr 10mins
Ingredients:
Dough:
1 tbsp Dry yeast
2 cups Warm Milk
1 large Egg
1/2 cup Granulated Sugar
1/4 cup Melted Butter
3 cups All Purpose Flour
Glaze:
3 bar White Chocolate
1/4 tsp Red Food Color
1/4 tsp Green Food Color
2 tbsp Milk Powder
1tbsp Corn Flour
Let's get cooking
1. Whisk the warm milk, yeast, and sugar together in the bowl Cover and allow to sit for 5 minutes. The mixture should be a little frothy on top after 5 minutes. If not, start over with new yeast.
2. Add the eggs, butter, yeast mix and 2 flour in a bowl, the dough will be runny at this point and mix them together till its all bound together. You want a slightly sticky dough. Knead the dough by hand or in the stand mixer on a lightly floured surface for 10 minutes until the dough is smooth and tacky.
3. Form the dough into a ball, Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1.5-2 hours or until double in size.
4. When the dough is ready, punch it down to release the air. Remove the dough from the bowl and turn it out onto a lightly floured surface. If needed, punch down again to release any more air bubbles. Using a rolling pin, roll the dough out until it is 1/2 inch thick. Using a 3-3.5 inch doughnut cutter, cut into 12 doughnuts. If you can’t quite fit 12, re-roll the scraps and cut more.
5. Line 1 or 2 baking sheets with parchment paper or silicone baking mats. Place donuts and donut holes on each. Loosely cover and allow to rest as you heat the oil. They will rise a bit as they rest. Place a cooling rack over another baking sheet.
6. Pour oil into a large heavy-duty pot set over medium heat. Heat oil to 375°F (191°C). Add 2-3 doughnuts at a time and cook for 1 minute on each side. Carefully remove with a metal spatula or metal slotted spoon. Wear kitchen gloves if oil is splashing. Place fried doughnuts onto prepared rack. Repeat with remaining doughnuts, then turn off heat.
Donut Glaze
1. Cut the chocolate in small pieces and put it on bowl. In a little larger bowl add water and keep it to boil. Keep the bowl with chocolate over the boiling water making sure that the water does not enter the bowl. The chocolate will start melting, stir it well for a smooth paste.
2. Add the milk powder and corn flour and mix it well so that the glaze sits well on the donut. Add the desired color in the chocolate for the decoration.
3. Dip each warm donut (don’t wait for them to cool!) into the glaze, making sure to coat both sides. Place back onto prepared rack as excess glaze drips down. After about 20 minutes, the glaze will set + harden.
4. For the decoration, put the glaze into a pipping bag and make a small hole for the fine detailing.
Serve best when warm and goes along with coffee.
