Gajar Ka Halwa/ Carrot Pudding

A winter seasonal ingredient, carrot, makes an amazing pudding which is a very famous Indian dessert. Gajar ka Halwa or Carrot Pudding is made by sautéing the grated carrot in the richness of ghee/ clarified butter. The aroma of sautéed carrots, ghee, and a hint of cardamom, making every taste bud in our mouth water. Gajar ka halwa is traditional made with khoya but you can also use condense milk.

Traditionally, this dish is made with a lot of ghee, milk, and sugar to give it an authentic taste. But these days where everyone prefers good and healthy food, I have altered this dish a little and still kept it essence and flavor. By using freshly grated carrot you don't need sugar for any added sweetness but if you prefer your dish to be sweet you can use condensed milk which enriches the flavor without making it extremely sweet that you would get with sugar.



Yield: 6 Prep Time: 10 mins Cook Time: 20 mins Total Time: 30 mins

Ingredients:

1 kg Carrot (freshly grated)

3 tbsp Ghee/ Clarified Butter

3/4 cup Chopped nuts (almond, cashew, pistachio)

1/3 cup Condense Milk

1/4 cup Milk

2 tsp Cardamom Powder


Garnish:

Ghee

Nuts

Raisings


Let's get cooking

1. Wash, peel and grate the carrot. To a pan, add in the ghee and chopped dry fruits, sauté until they are golden. Once you get the nutty fragrance remove it from heat and set aside.


2. In a heavy-bottomed pan, heat ghee, add the grated carrots to the pan, and turn the heat to medium-high. Sauté the carrots for a minute or two.


3. Add the condense milk and mix it well. Now pour in the milk little by little until the carrots are soft. Stir well to avoid any lumps to form.


4. Once the milk is evaporated, add in the cardamom powder and the toasted nuts and mix it well.


Serve warm and garnish it with freshly chopped nuts and raisins.
