Veg Hara Bhara Kabab

Hara bhara kabab are a potato and spinach filled patties. This dish has a range of alternative veggies and flavor that can be added to complement the dish. I have pan-fried theses spiced patties but you can also deep fry or grill them very easily. The recipe is very healthy and contains all the needed nutrients for a healthy diet with a load of flavor. Accompanied with a delicious mayo coriander dips, makes this even more flavorful.

Veg Hara Bhara Kabab with mint chutney

True to its name, Hara bhara kabab is a boosts of green health, made from spinach, peas and potatoes, it is nutritious as well as delicious and tastes great with any chutney or sauce. Potato acts as a binding agent in these kebabs and so does cornstarch. Besan (chickpea flour) will work well too. Also, I added some bread crumbs in the dough. You can even roll the kebabs in bread crumbs before frying them, they would be crispier that way!



Serve: 7 Prep Time: 15 mins Cook Time: 45 mins Total Time: 1 hr

Ingredients:

4 cups Baby Spinach

3 large Potato

1 cup Green Pea

1 tsp Chopped Ginger

2 large Green Chili

1/2 cup Coriander Leaves

1/2 cup Bread Crumbs

2 tbsp Cornstarch

1 tsp Cumin Powder

2 tsp Chaat Masala

2 tbsp Oil

Salt to taste


Sauce:

1/4 cup Mayo

3 tbsp Coriander (chopped)

1/2 tsp Granulated Sugar


Garnish:

Lemon

Onion

Coriander


Let's get cooking

1. Wash spinach leaves and place them in a pan on medium heat. Add some water and let them cook for 2 minutes. After 2 minutes, the leaves will be all shriveled up. This is called blanching the spinach. Remove and keep the leaves in cold water for 1 minute. Finely chop the spinach and keep aside.


2. Steam or boil the potatoes and peas in a pressure cooker or pan (pressure cooker details mentioned below in the step wise pics). Crush chopped ginger and green chilies in a mortar-pestle to a paste.


3. In a bowl take the chopped spinach. Grate the boiled potatoes in the bowl. Add the peas & green-chili paste. Mash the kabab mixture with a potato masher or with a wooden spoon.


4. Add all the dry spice powders, and salt. Mix the kabab mixture very well. Shape into round patties and pan fry till crisp and golden.


Mayo Coriander Dip

In a bowl add in the mayo and granulated sugar and whisk it. Now add the coriander and serve it cold with the kabab


Serve Hara Bhara Kabab hot with coriander chutney or mint chutney or tomato ketchup or with the mayo coriander dip.
