Pesto is one of my favorite pasta sauce, as it can be made in minutes and taste super delicious. This sauce is super versatile and can be used in more than just pasta. You can add this sauce to anything you like. Few dishes which you can make with the least ingredients and give a fancy taste with this pesto sauce are the classic pesto spaghetti noodles, homemade pesto chicken pizza, best evening snack with sweet potato wedges with pesto sauce.
Spinach Pesto Sauce is an Italian recipe that can be prepared with easily available ingredients such as baby spinach, garlic, walnut, lime zest and Parmesan cheese. Traditionally, pesto is made with basil but you can make it with a lot of other things like spinach, cilantro, arugula, parsley, spring greens etc. The same applies to nuts, traditionally pine nuts are used but you can use walnuts, almonds, pistachios!

Ingredients:
2 cup Baby Spinach
1 cup Fresh Coriander
4 medium Garlic Cloves
3 medium Green Chili (As per your preference)
1 tsp Oregano
1/2 tsp Pepper
1/4 cup Walnut
4 tbsp Lemon Juice
1 tbsp Olive Oil
1/4 cup Parmesan
Salt as per taste
Let's get cooking:
1. Soak the walnuts overnight or soak in hot water for 2 hours, peel it. Boil the spinach until it simmers. Keep aside little water to use while blending the paste, remove the spinach, and put it in ice water (this will enhance the dark fresh color of the spinach).
2. To the blender, add spinach, coriander, garlic, green chili, oregano, pepper, walnut, lemon juice, olive oil, Parmesan cheese, and salt to taste. Blend well and add the spinach water if need to make a smooth paste.
Use this sauce in your favorite pasta dishes, with freshly Parmesan cheese and sesame seeds.
