Palak Paneer

Paneer is a very versatile ingredient making it easy to cook and pair with any other ingredient. Palak paneer sabji (vegetable) is a smooth gravy with the flavor of creamy paneer and freshness of spinach and coriander. This Palak Paneer dish is a instant one pot restaurant style recipe.

Blanching fresh spinach brings out the flesh look of the spinach and enhance the gravy taste with the garlic flavor and the richness of fresh cream. With these simple ingredients make a quick and easy Palak Paneer recipe.

Ingredients:


Palak/ Spinach Puree

5 cup Spinach

2 cup Coriander

4 clove Garlic

1/3 Ginger

1/3 cup Cashew Nut

2 medium Green Chili

1/2 tsp Cumin

1/2 tsp Garam Masala

2 tbsp Fresh Cream

2 tbsp Lemon Juice

Salt as per taste


Palak Paneer Gravy

200 - 250 gm Paneer

2 medium Onion

2 clove Garlic

1/2 tsp Cumin

1 tsp Kasturi Methi


Garnish

Fresh Cream

Lemon juice

Onion


Let's get cooking:

1. Rinse the palak (spinach) and blanch it till the leaves look dark green then remove it out of the boiling and put it in a bowl of ice water, and once it is cool enough to handle cut the spinach.


2. To the blender add the spinach, coriander, garlic, ginger, cashew nuts, green chili, cumin seeds, lemon juice, garam masala, and fresh cream. Blend them all into a fine silky smooth paste.


3. In a pan heat oil, and put the cumin seed, once it crackles add the onion(finely chopped) and garlic. Sauté until light brown. Add the ground paste to the pan and add water accordingly. Put in the Paneer cubes and simmer for 15 mins on medium flame. Once it starts boiling add the crushed Kasturi methi to the gravy.


Serve it with rice, roti, or naan along with pickled onion, lime, and fresh cream.
