Pesto Spaghetti Noodles

A quick and easy pesto sauce is the best twist to a plate of spaghetti noodles. It adds the freshness with its green color and herby and garlicky taste. This recipe is the quick fix for those lazy days. I have used a Homemade Pesto Sauce which is made with spinach and walnut as alternative to basil and pine nut which is best for people who have allergies.

The fresh green herb brings life to any type of pasta. The pesto sauce gives a blast of flavor from the garlic and the nut. Including the spinach gives the sauce a nutritional boost. And finally, finish the dish with some black sesame seeds and feta cheese on top.



Serve: 2 Prep Time: 5 mins Cook Time: 15 mins Total Time: 20 mins

Ingredients:


Pesto Sauce

1/2 cup Extra-virgin olive oil

2 cloves Garlic

2 cup Coriander/ basil

1 cup Spinach

2 small Green chili

1/3 cup Walnut

1 tbsp Lemon juice

¼ cup grated Parmesan cheese

1/2 tsp Salt


Pasta

1 tbsp Extra-virgin olive oil

2 large Garlic, finely sliced

2 tbsp Green chili sauce


Garnish

Feta Cheese

Black Sesame seed

Oregano


Let's get cooking

1. Cook the pasta in the pot of water. Add salt and oil to the water. Boil the noodles until it is easy to bite. Reserve 1/2 cup of the cooking liquid, drain the noodles and return it to the pot.


2. To a blender, add coriander/ basil, spinach, walnut, extra-virgin olive oil, Parmesan cheese, garlic, lemon juice and salt. Purée until smooth, add water if necessary.


3. In a pan add the extra-virgin olive oil, once the oil is hot add the garlic and green chili sauce. Toss the noodles and add the pesto sauce, adding some of the reserved cooking water if the pasta seems dry.


Serve and top it off with feta cheese and sesame seed.
