Scallion Pancake

Scallion pancakes or Spring Onion are a popular street food from china served as breakfast or snack. These have a crispy, flaky texture and taste too good and can be enjoyed for breakfast or as an evening snack. An unleavened flatbread stuffed with scallions or green onions or spring onions is filled with a fresh and comforting flavor. Unlike Western pancakes, it is made from dough instead of batter. It is pan-fried which gives it crisp edges yet also a chewy texture. A unique characteristic of scallion pancakes is the many layers that make up the interior, which help contribute to its chewy texture.

This pancake is just like an Indian Paratha but has a classic chines taste to it. With just 3 ingredients; all purpose flour/ maida, water and scallions/ spring onion you can make this delicious pancakes. Just stir the flour with a wooden spoon or chopsticks in a large bowl as you add the boiling water. After it comes together, turn it out onto a floured work surface and knead for five minutes until satiny and smooth.



Serve: 4 Prep Time: 5 mins Cook Time: 25 mins Total Time: 30 mins

Ingredients:

2 cup All Purpose flour, plus extra, to dust

3/4 cup Scallions / Spring Onion

1/2 cup Hot water and cold water

Salt for taste


Garnish 1 tsp Soy sauce

1 tbsp Rice vinegar

1 smalll Green chilli, finely minced

1 tsp Minced ginger

1 tsp Sugar

1/4 tsp Toasted sesame oil

2 tsp Water


Let's get started

For The Pancake

1. Make a dough with flour, hot water and salt. Set aside to rest for 20 minutes.


2. In a bowl, add 1 tbsp of flour and 1/2 tbsp of oil, mix it well make sure there are no lumps. This glue will help get the flaky texture.


3. Dust the rested and spiraled dough in flour and flatten and roll into a 3 to 3.5 inch circle. Brush it with a thin layer of oil. Sprinkle the green onions on the rolled dough. Brush it with a thin layer of flour and oil glue. Gently, roll the dough into a log. Roll the log again to form a spiral. Repeat with the remaining dough and keep it for 10 mins


4. Flatten the dough again, dust with flour and roll it into a thin disk. About 2.5 to 3 inches.


5. Heat a skillet and add in half a teaspoon of oil. Place the green onion rolled dough on the skillet and add half a teaspoon of oil on top. If you want extra crispy pancakes, add a little more oil. Cook for 2 minutes on each side on a medium flame till the pancakes are brown and crispy.


For The Dipping Sauce

Take a cup and add in all the dipping sauce ingredients and mix well. The dipping sauce is ready.


Serve the pancake with the dipping sauce and hot coffee or a hot coco.
