Pasta

Let's get cooking:

Meatballs

1. In a bowl mix the two types of meat along with onion, ginger, garlic, green chili, black pepper, coriander, a little salt for 2 - 3 mins. Wear hand gloves while mixing. Now add the eggs, olive oil, breadcrumbs, and cheese mix them together. Do not over-mix or the meatballs will be tough. Form 1-inch balls and let them rest for 15 mins.

2. In a pan, heat the oil on medium heat, add the meatballs according to the capacity of the pan. Do not over-crowd the pan. Fry the meatballs till they are brown in color. Once done remove them and add the other batch of meatballs and fry the same way.

Marinara Sauce

1. In a sauce-pan, boil the tomatoes until the skin peels off. Once cooled, peel the skin and put it in the blender along with garlic, olive oil, oregano, onion, and salt to taste.

2. In the sauce-pan, heat olive oil on low heat and add garlic to it. Once the garlic turns brown and pour in the blended paste and cook for 15 mins. Add water is needed.

3. Add the meatballs to the sauce and cook it for 5 min.

Pasta

1. In a pot, add water, salt, oil, and pasta and cook the pasta on high heat with a vigorous boil. Put a timer on for 8 to 10 minutes, or according to package directions for al dente pasta (cooked but still a little firm). Drain.

To Assemble

To serve, place a thin layer of sauce on the plate, add pasta, add sauce and meatballs, and then sprinkle with grated Parmesan-Romano cheese.

Serve it hot with grated Parmesan cheese and parsley cheese.
