Spicy Garlic Crispy Potato

Ingredients:


Potato Fries

4–5 medium Potatoes, peeled and cut into fingers

Oil for deep frying

1 tsp Red Chili powder

1 tsp Ginger Garlic Paste

1/4 cup Corn Flour

1/4 cup All-Purpose Flour

2 tbsp Oil

1/4 tsp Salt

Water for a smooth paste


Sauce

2 tbsp Oil

1 tbsp Garlic, finely chopped

1 medium Capsicum

1 tsp Red Chili Sauce

1 tsp Soy Sauce

2 tbsp Tomato Ketchup

1 tsp Vinegar

1 tsp Red Chili Paste

1/4 cup water + 1 Tsp Corn Flour mixed to make a slurry


Garnish

Spring Onion

White Sesame Seeds

Oregano


Let's get cooking

1. Wash potato fingers well in running water and set aside. This removes any extra starch in the potatoes. Pat dry the potatoes so that the batter is able to stick.


2. To a bowl, add the all-purpose flour, corn flour, ginger garlic paste, red chili powder, salt, oil. Whisk the batter and add water little by little and whisk it till it again to make a smooth paste. Put the cut potatoes in the batter and coat it well. Deep fry the potatoes till crispy brown. Remove the potatoes and put on the tissue paper to soak the excess oil.


3. In a wok/ pan, add oil and once the oil is hot add the garlic and capsicum and stir fry till the garlic is golden brown. Now add vinegar, soy sauce, ketchup, and the red chili paste and stir together. Mix corn flour with 1/4 cup water to make a slurry and add this mixture in the wok and stir for a few seconds till it thickens.


4. Add the fried potato fingers and spring onion greens and toss together so that they are coated evenly in the sauce.


Serve immediately garnished with some sesame seeds and spring onion greens.
