If you like Subway's Choco Chip Cookie, you'll love this copycat recipe! These cookies look and taste exactly like the popular Subway chocolate chip cookies, but they are far superior. Whereas Subway cookies can be overly fudgy at times, these have just the right texture. They're crunchy around the edges, soft in the middle, and chock-full of chocolate chips in every bite.

These cookies have everything! Most significantly, the dough does not need to be chilled, so you can have delicious cookies in your mouth in under 30 minutes! Furthermore, the dough freezes well and can be baked from frozen, so you may have a batch ready to go anytime the craving for a cookie strikes!


Tips for the Best Cookies 

  1. Use room-temperature eggs – they’re easier to combine with the other ingredients compared to cold eggs.

  2. Use high-quality butter. This key component is responsible for the rich flavor and soft texture of the cookies, so you want to be sure you use a good brand. Don’t settle for margarine or compound butter.

  3. This recipe uses both white and brown sugars for a reason. Brown sugar contains molasses, which aids in adding moisture to the cookies. It also has a deeper, caramel-like flavor. 

  4. Instead of chocolate chips, take a block of dark chocolate and chop it yourself. That way, you get bigger chunks of chocolate! They also give the cookies a rustic, homemade feel to them. Also the flavor is much better.

  5. Brown you butter. Trust me browning your butter gives wonderful flavor and nuttiness in every bite

Why Are Subway Cookies So Soft?

The secret is in the butter… specifically, the way that the butter and sugars are beaten together. The air trapped inside will then expand during baking, making the cookies extra soft and airy. It’s the same process used when baking cakes. Creaming will take about 4 to 8 minutes, depending on how powerful your electric mixer is.

Also, melted butter almost always guaranteed over-spreading.

Ingredients:

1 cup All-purpose flour

1 tsp Baking Soda

1 cup Unsalted Butter

2 tsp vanilla extract

1/2 cup White sugar

1 cup Dark Brown Sugar

1 tsp Espresso Powder

2 large Eggs

2 cup Dark Chocolate Chopped

1 tsp Salt


Let's get cooking

1. In a medium bowl, sift together the flours, salt, and baking soda. Set aside.


2. In a medium or large saucepan, add the butter and melt over medium heat. The larger the pan you use, the quicker the process will be! Bring the butter to a boil, stirring frequently. As this begins to happen, keep stirring regularly to ensure that the butter browns evenly. It may become quite foamy, splatter a little, and be difficult to see, so keep an eye on it and remove from heat and continue to stir if it begins to foam over.


3. Once the butter has turned a nice nutty brown, remove from the heat and pour into a large liquid measuring cup to stop the cooking. Allow it to cool down for a minute or two, give it a stir. Set aside to cool to room temperature. To help speed this process up, you can place in the fridge for 10-15 minutes. You want to make sure the butter is still liquid when you’re adding it to the dough later on, so make sure to remove after 15 minutes.


4. In a large bowl, add the sugars, vanilla, espresso powder, and cooled brown butter. Cream together with an electric hand mixer until light and fluffy, 1-2 minutes.


5. Add the egg and yolk and beat until incorporated.


6. Add the dry ingredients, about ⅓ of the mixture at a time, and beat between additions until just incorporated. It’s okay for there to be a bit of unmixed flour on the edge of bowl, this will be incorporated in the next step.


7. Add in the chopped up chocolate to the batter.


8. Bake in a preheated oven for 12-14 minutes. Let the cookies cool on the baking sheet for 2-3 minutes before transferring to a cooling rack to cool completely.
